This seems like a really cool experiment for class, but an explanation on the science of why the tomato glows would be appreciated.

Technical Remarks:

I couldn't find the video on the webpage, and there isn't an explanation for the chemical reaction that causes the tomato to glow.  The experiment seems really easy to perform.
