This site is a trove of quantitative and qualitative information on American presidents, organized in a user-friendly way. Though I have not used it in a course myself, I could easily envision sending advanced undergraduates there to find data for original research papers and projects. Will definitely keep it in mind for the next time I teach a U.S. presidency course.

I have students in an online American Government course use the executive order archive to see how presidents have used EOs to achieve policy goals in various periods of American history. This website is a great resource.
