This site is a collection well-referenced, peer-reviewed chapters on vitamins, minerals, other nutrients, and individual foods. It is a public service of the nutrition department at Oregon State University. Each chapter is written by one of their Ph.D. faculty and is reviewed by an external authority on the subject. The chapters cover the basic biology of the nutrients as well as sources, deficiency, role in health promotion, and safety issues. References are linked to Pubmed for quick access to abstracts or full text of the cited works. The collection would be suitable as a course textbook or as reference material. Familiarity with college level biology and chemistry is recommended, although there is a glossary linked to many terms in the text.
