This open textbook is brilliant. It provides a thorough and engaging overview of nutrition, metabolism, and digestion, and even includes information about scientific inquiry in nutrition.
The nutrition content is complete and appropriate
Has knowledge queries in the chapters so learners can check their understanding of the content.
The open Nutrition textbook is appropriate and well written.
Students can use it to reinforce concepts, and faculty can use it or parts of it for additional resources in courses. It is also amazing that it is open to all.
Concerns:
The common digestive disease problems are light on content. While Wikipedia is an incredible resource, it is slightly concerning that it is a primary reference throughout. College students need to learn how to access and use published peer-reviewed resources, and it may be good to include more evidence-based references to model this for students.
Potential Effectiveness as a Teaching Tool

The text is interesting to the eyes. It includes Figures, images, links, resources, text and knowledge queries.
The text increases the potential for student learning by increasing the level of engagement. The knowledge queries are fabulous ways for learners to check their understanding. Bravo!
The open book contains great graphics to help the learner conceptualize the information. For example, the metabolic pathway figures are excellent.
Concerns:
The use of learning objectives at the start of each chapter would improve the communication of the teaching/learning goals.
Some of the resources within the open text were not found. For example, in the alcohol metabolism section, just before the query, the text refers to an animation. This animation was not located.

The textbook is so interesting and easy to use that is is fun to explore!
