I found this site while taking a Sloan-C Workshop on Mobile Apps. It seems to have a lot of great resources in one place for mobile apps and educational technology. There are so many apps available it is nice when you find a resource dedicated to education and specifically apps for the iPad. It should at least serve as a good starting point.
